Golden Caramel Sauce
Ingredients:
- 2 c. sugar
- 1/2 c. water
- 2 tbsp. light corn syrup
- 1 c. heavy cream, warmed
- 4 tbsp. salted butter, softened
- 1 tsp. vanilla extract
- 1/2 tsp. salt
Directions:
- In 4-quart saucepan with candy thermometer attached, stir together sugar, water and light corn syrup. With pastry brush dipped in water, brush any sugar crystals off side of pan. Heat to boiling on medium-high without stirring, about 3 minutes. Boil until dark amber (320 degrees F to 345 degrees F on candy thermometer), about 9 minutes.
- Working quickly, remove pan from heat and add heavy cream (caramel will steam and bubble up) and butter, stirring until smooth.
- Let caramel cool slightly. Stir in vanilla extract and salt. Let cool completely. Store at room temperature up to 1 month or in refrigerator up to 2 months. Reheat in microwave 1 minute before serving.
Makes 2 1/3 cups
Caramel Apple Spice Drink
(Non-Alcohol)
Ingredients:
- 4 cups apple juice
- 3 tablespoons sugar
- 1/8 teaspoon Cinnamon concentrate
- Dash of apple pie spice
- Dash of powdered Ginger (if you like ginger)
Directions:
- Start in a medium sauce pan (big enough for the 4 cups to fit) place the sugar. Start the caramel over medium-medium high heat, try to get an nice even layer on the bottom.
- Watch that sugar like a hawk, try not to stir it. After a short while will start to melt, then turn slightly brown.
- Once this happens take it off the heat. Don’t just turn the heat off, remove the pan from the burner.
- The sugar will continue to caramelized off the heat for a few seconds. If you still have some clear patches tilt the pan slightly and roll it to allow the sugar to blend. Just remember that melted sugar is like napalm.
- Next, pour in the apple juice. Once it hits the pan it will start to spit and boil but just give the juice an nice even pour till it’s all in. Place the pan back over heat add the spices and stir till the sugar has dissolved. Once it starts steaming it’s good to go.
- It can be served topped with whipped cream and then you can drizzle some of the caramel sauce from the recipe above if you wish & enjoy!
