Beach Bungalow Banquet made easy!
Watermelon-Tequila Cocktail
Ingredients:
- 1/4 cup water
- 1/4 cup granulated sugar
- 8 cups diced seedless watermelon (1 pound)
- 1/4 cup fresh lime juice
- 1 3/4 cups blueberries
- 3/4 cup lightly packed fresh mint leaves, plus 8 sprigs for garnish
- 1 1/4 cups silver tequila
- Ice
Directions:
Step 1
In a small saucepan, bring the water to a simmer with the sugar and stir over moderate heat until the sugar is dissolved about 1 minute; let the sugar syrup cool.
Step 2
In a blender, puree the watermelon until smooth. Set a fine-mesh strainer over a bowl and strain the watermelon juice, pressing gently on the solids to extract as much juice as possible. Discard the pulp.
Step 3
In a large pitcher, combine the sugar syrup with the lime juice, blueberries and mint leaves. Using a wooden spoon, lightly muddle the blueberries and mint. Add the watermelon juice and tequila. Refrigerate until chilled, about 2 hours.
Step 4
Pour the cocktail into tall ice-filled glasses. Garnish with the mint sprigs and serve.
Paloma Cocktail
Ingredients:
- 1 lime wedge
- Kosher salt (optional)
- Ice
- 2 ounces blanco tequila
- 1 ounce fresh grapefruit juice
- 3/4 ounce fresh lime juice
- 1/2 ounce Simple Syrup
- 1 ounce chilled club soda
- 1 lime wedge, for garnish
Directions:
- Moisten the outer rim of a highball glass with a lime wedge and coat lightly with salt.
- Fill the glass with ice.
- Fill a cocktail shaker with ice, then add the tequila, grapefruit and lime juices and Simple Syrup; shake well.
- Strain into the glass, stir in the club soda and garnish with a lime wedge.

Beach Bungalow Banquet made easy!
Cherry Bomb Mimosas
YIELDS: 4 PREP TIME: 5 MINS
INGREDIENTS:
1 c. pineapple juice
1/4 c. maraschino cherry juice (from the jar of cherries)
1 bottle champagne
Orange slices, for garnish
DIRECTIONS:
- In champagne flutes, combine pineapple juice and maraschino cherry juice. Top off with champagne and garnish with an orange slice.
Southern Comfort Punch
Ingredients:
- 6 lemons
- 4 navel oranges
- 4 navel oranges
- 1 six-ounce frozen orange juice, concentrate
- 2 liters lemon-lime soda
- 1 liter Southern Comfort
Directions:
- Step 1
Line two baking sheets with plastic wrap, and set aside. Slice lemons into rounds as thin as possible. Arrange lemon slices in layers on one prepared baking sheet. Repeat with oranges; layer on second baking sheet. Place in the freezer for 2 to 2 1/2 hours, until fruit slices are frozen.
- Step 2
Just before serving, open the cans of frozen lemonade and orange juice, and place the frozen concentrates, whole, in a large punch bowl. Add the soda, Southern Comfort, and several handfuls of ice. Remove frozen fruit slices from freezer, and arrange over the top of punch. Serve immediately.

Beach Bungalow Banquet made easy!
KINDNESS in a Glass
Ingredients:
- 3/4 ounce (1 1/2 tablespoon) Drambuie
- 1/2 ounce (1 tablespoon) gin
- 1/2 ounce (1 tablespoon) lemon juice
- 1/4 ounce (1 1/2 teaspoon) Honey Simple Syrup (recipe below)
- 4 ounce (1/2 cup) sparkling wine
Directions:
In a mixing glass filled with ice, combine the Drambuie, gin, lemon juice, and simple syrup, and stir to combine. Strain into a wine glass and top with sparkling wine just before serving.
Honey Simple Syrup
Makes about 3/4 cups (enough for 24 cocktails)
- 1/2 cup honey
- 1/2 cup water
Combine the honey and water in a small saucepan and bring to a simmer over medium heat, stirring constantly until the honey dissolves. Cool completely before use.
Kindness Cocktail
Ingredients:
- 2 oz Stoli Premium Vodka
- ½ oz orange juice
- ½ oz simple syrup
- 2 oz chilled steeped cranberry tea
- ½ oz fresh lemon juice
Directions:
- Fill a martini shaker half full of ice.
- Add all ingredients.
- Shake for 20 seconds.
- Strain into a sugar-rimmed martini glass.

Beach Bungalow Banquet made easy!
Mai Tai
Ingredients:
1 1/2 oz White rum,
1/2 oz Fresh lime juice,
1/2 oz Orange curaçao,
1/2 oz Orgeat syrup,
3/4 oz Dark rum
Preparation:
Shake all ingredients except the dark rum together in a mixer with ice.
Strain into glass and float the dark rum onto the top.
Garnish and serve with a straw.
Served:
On the rocks; poured over ice.
Standard garnish:
Lime peel, Pineapple spear
Tequila Sunrise
Ingredients;
1 1/2 ounces tequila
3/4 cup orange juice
3/4 ounce grenadine syrup
Orange slice, for garnish
High-quality maraschino cherry, such as Luxardo, for garnish
Directions
- In a highball glass filled with ice, pour in the tequila and orange juice.
- Slowly pour the grenadine into the glass over the back of a spoon or by drizzling it down the side of the glass, allowing it to settle at the bottom.
- Garnish with an orange slice and maraschino cherry.
