A classic layered gelatin dessert  with the addition of your favorite flavored rum or vodka!

Let’s get this party started!

Ingredients:

4 1/2 cups water, divided
6 3 oz packages flavored gelatin dessert mix
3 envelopes plain gelatin (6 tsp gelatin powder, divided)
3 cups flavored rum or vodka, divided
1 1/8 cup vanilla yogurt, divided

Directions

  • Place the bottle of liquor in the freezer for several hours before beginning recipe.
  • Lightly spray bundt pan or gelatin mold with non stick cooking spray (I used a 10 cup bundt pan). Wipe off the excess spray with a paper towel. A slight residue should remain, just enough to help unmold your gelatin, without affecting the taste or appearance.
  • Pour 3/4 cup water into a saucepan and sprinkle with 1 teaspoon of the plain gelatin. Allow gelatin to soak for a minute or two. Heat over low heat, stirring constantly, until gelatin is dissolved (about 5 minutes). Whisk in the first package of flavored gelatin. Whisk for at least 2 minutes, or until completely dissolved (I find the sugar free mix dissolves much faster than the regular).
  • Remove from heat. Add 1/2 cup of the cold liquor, and stir to combine.
  • Pour 3/4 cup of the gelatin mixture into the prepared mold, and place in refrigerator. Allow to set for 20 to 30 minutes, until the gelatin is a little firm, but still sticks when touched. Very important – if the layers set up too much, the next layer won’t bond appropriately.
  • Refrigerate the remaining gelatin mixture in bowl about 5 minutes or until slightly thickened (consistency of unbeaten egg whites). Gradually stir in 3 tablespoons of yogurt and stir until well blended. This cooling step is also important – the gelatin must be cooled to room temperature before adding on top of other layers, or the layers will not be well defined!
  • Gently spoon the gelatin/yogurt mixture over set gelatin and return to the refrigerator. Refrigerate about 15 minutes or until gelatin is set but not firm (again, it should stick to finger when touched). As the layers progress, the setting time will become shorter as the pan and gelatin becomes colder, and the layers become thinner as more layers are added to the mold.
  • Repeat steps with remaining gelatin flavors, for a total of 12 alternating clear and creamy gelatin layers.
  • After completing all the layers, refrigerate the gelatin overnight. To unmold, fill a larger container or clean sink with warm water (not too hot!). With clean fingers, loosen the gelatin around the edges of the mold cavities. Next, dip the mold almost to the edge into the warm water for just a few seconds (10 seconds worked for me). Dry the bottom of the mold with a towel and check the edges to see if they are loose. If not, repeat the dip for just a few seconds. Place your serving plate on top of the mold and invert. TA DA!

You can make it without alcoholic too!

For a non-alcoholic version, use fruit juice instead.

You can change the colors for Holidays. Red, white & Blue for the 4th of July, etc.

Please, drink responsibly. Don’t drink & drive.

The Indian Shores/Redington Beaches Holiday Boat Parade Committee has announced that the 2015 edition of the annual Holiday Boat Parade will be staged, weather permitting, on Sunday, December 20th, 2015, beginning at 6 PM.  Participating boats are requested to rendezvous just north of the Tom Stuart (Madeira Beach) Causeway at approximately 5:45 PM, for the 6 PM start of the parade.

The parade is sponsored, jointly, by the towns of Indian Shores, Redington Beach, North Redington Beach, and Redington Shores.  Each town provides initial financial support which is supplemented by private cash donations and prize merchandise donations from local businesses.

This year, the Committee hopes to increase the value of the prizes distributed to the winning boats.  This year, the total prize value is expected to exceed $8,000, shared among the almost 30 boats entered.

The Parade route will following the Intra-Coastal Waterway starting just north of the Tom Stuart Causeway Bridge (Redington Beach) and finishing at The Pub restaurant in Indian Shores.  It meanders into the creeks and canals that branch off the ICW, passing along the shoreline of each of the participating communities.

Come on down for this FREE event. Watch the Boat Parade illuminate the night sky on the Intracoastal Waterway. The boats should be passing the Indian Shores Municipal Center Pavilion around 7:30 pm – 8 pm.
It will be fun for the whole family. Come join us for this FREE community event. There will be hot chocolate, coffee and treats for the spectators to enjoy as they view the passing festival of lights. Watch the Intracoastal Waterway light up as the boat parade passes, wave to Santa or cheer for your favorite decorated boat. Come on down and join your neighbors and friends (or make some new ones). Come enjoy this wonderful holiday tradition.

The Captain’s meeting for participating boats will be held at the Town Hall of North Redington Beach, 190 173rd Avenue, North Redington Beach, on Thursday, December 17th, at 7 PM.

The awards ceremony will take place at The Pub Restaurant, following the arrival of the last boat parade participant. Again this year, Steve Westphal, owner of The Pub, has graciously extended an invitation to all participants to dock their boats overnight in the restaurant’s marina.

Major prizes, consisting of gifts and cash, are given to the top three boats in each category.  The three judging categories are based on the lengths of the participating boats; typically, the categories break at approximately “under 25 feet,” “25 – 35 feet,” and “over 35 feet.”  The Committee tries to put equal numbers of boats in each category.

Entry forms for the parade are available now at the Town Halls and Web sites of the participating towns.  Entry forms will also be distributed to local marinas for boaters to pick up.
